Is it possible to use word 2007 (or any other office 2007 apps) to create a
fillable PDF document?

Meaning a PDF file with fields that users can type in and then print.

I'm looking for solution within microsoft products, or freeware.
 
Not aware of any non-Adobe products that do this. Try finding something
through Google.
For Adobe products, prior to Acrobat 9, you needed Acrobat Professional to
create fillable forms; Acrobat Standard v9 now does it too.

There are several software programs that can create fillable PDF forms that are lower priced than Adobe's Acrobat. While not quite
free, there is CenoPDF http://lystech.com ($39.95) and you can download the eval version (which adds a watermark on each page until
paid) to see if it will do what you need.
Another ($19.99) is PDFill (http://PDFill.com) from PlotSoft.
One of the better known packages is FoxIt Editor from http://foxitsoftware.com/pdf/pe_intro.php a bit pricier.
