How to keep unwanted mail out of my inbox

I came to Outlook from AOL, where I was able to create a 'custom sender
list'. Any email received from senders not on that list went to the spam
folder. How do I accomplish the same thing in Outlook? I know about blocking
specific senders but that doesn't cover the unknown senders.
Alternatively, is there a way to delete an email without opening it first?

Depends on the version, which you decided wasn't important enough to
mention.

Certainly. Right-click and choose Delete or select it and press (or click)
Delete.
 
Try posting this in an Outlook Express news group - this is not one of them.
Outlook is a part of Microsoft Office and is what this group supports.
Outlook Express is a part of Internet Explorer and has its own news groups.

You're in the wrong newsgroup. This newsgroup is for Office Outlook, a
completely different application than Outlook Express. The newsgroup you
want is news://msnews.microsoft.com/microsoft.public.outlookexpress.general
