Before any kind of answer can be provided, would be extremely helpful if
details were provided along with a clear question.
#1 - Your subject line states "How import Excel to Outlook with <extra>
fields" - what exactly do you mean by "extra fields"? There is no such thing
as "extra fields" - each data source (Excel, Access, CSV etc) simply has a
list of fields for each row/record. There is, however, a limitation as to
what any of those fields can be imported to in terms of the Outlook standard
and/or custom fields (in short - can't import data to any user-defined
(custom) Outlook field using Outlook's import wizard).
#2 - "Do not seem to have <mapping options> all the instructions seem to
discuss" - which refers to what exactly? Which "mapping options" don't you
have specifically that <all the instructions seem to discuss>? At what point
in the process that you have followed do these options "not appear" that are
being referenced?
#3 - "I get the same <stupid error message>" - the error message is what
exactly? At what point exactly does this "stupid error message" appear?
#4 - "Am I missing some super simple step?" - impossible to tell what you
may be missing without identifying exactly what steps you've followed and
results of same.

PS - Would also respectfully suggest not using ALL CAPS in future.
