How to I turn back on 'tab key' to change multilist level in word

I am using word 2007 and I WAS using the Tab key (and shift tab) to increase
and decrease the multi level list. There was pop up as the auto format was
doing something different. I clicked it and now my tab wont work on the list
level! I can't find out how to return it to normal. PLease help!

In Word 2007, go to Office button > Word Options > Proofing > AutoCorrect
Options. Click the AutoFormat As You Type tab (not the similar AutoFormat tab)
and check the box for "Set left and first-indent with tabs and backspaces".
 
A bit more problematic

I have a problem that may be somewhat related but seems a little harder to me. I'm using Word 2007. I want to have 2 types of lists: A numbered one which is multilevel (and always uses digits, so 1, 1.1, 1.1.1, 1.1.1.1 etc.) and a bulleted one with about 4-5 different bullets. My indents are always 0.75 cm added to each level, only to the text and bullets, not to the numbers (numbers start on the left, bullets indented according to level).

Now my problem: I want the tab character at the beginning of the line to auto-format to the first level of bullets. I want "1 " (1 space) or "1<tab>" to start a numbered list. I want the tab at the beginning of a line to increase the level and a back-tab at the beginning of a line to decrease the level, and I want them both to revert to Normal when Back-tab reaches level 0.

Can anyone here explain to me how to do these last parts? I have the two lists (and I'm willing to recreate them if needed) but I can't make the keys stick and it seems the only style that is willing to revert to Normal is "list paragraph" which is too hard for me to control.
