After furious head scratching, KayeC asked:

|| referring to a custom form, did you not select the standard Email
|| field(s) from the Field Chooser versus creating a new user-defined
|| field in which case any data already in any of the 3 email address
|| fields will still be there. Outlook processes existing email fields
|| according to predefined processing rules (i.e. resolving the email
|| address, populating Email Display As etc) which you cannot do by
|| simply adding a new field "intended" to be used as an Email Address
|| field.
