how to disable incoming mails to automatically update the FROM address

Hi there
I am looking for the procedure on how to disable
incoming mails(Outlook 2002) to automatically update the
FROM address into your address book, making a new
contact.

Outlook 2002 doesn't do that. What has convinced you that it does?
