How do I turn off disc caching for one particular drive (e.g. S:) ?

I think you can only do this to a whole physical drive (ie it
will affect all partitions/volumes on that drive.)
Have a look in the properties of the physical disk within
Computer Management. There may be a jumper on the
drive that disables/enables write caching (I assume this
is what you mean?)

Did you check in Device Manager, Disk Drives, select the physical drive,
Properties? On the Disk Properties tab, uncheck the cache box.
