Firstly, neither MOV or AVI formats are actually media formats in
themselves. They are actually both frameworks within which different
compression methods can be used. MOV tends to use a variant of MPEG4 IIRC,
but AVI can be pretty much anything, although the DiVX MPEG4 codec is quite
popular these days. Note that these 2 implementation of MPEG4 are NOT
inter-compatible as there is no real standardisation in the MPEG4 format as
yet.
Converting between media formats can be problematic at best, and you always
lose a little in the conversion as they are all lossy compression methods.
You've find guides for what you want to do at
www.dvdrhelp.com and
www.doom9.org but the end result will not be as good as your starting point.
A better option would be to start with an uncompressed source if possible
and then convert to the required format.
