how to change e-mail address?

OL 2003 - when someone e-mails "here's my new e-mail" what's the easiest way
to overwrite the old one?
 
Open that person's contact record and paste the new address into the E-mail
box. Later on, if you're trying to address a new message and the old
address pops up as a suggestion, just press delete and it should go away
forever.

trouble is that "later on" I've forgotten which is the new one!
If you add to contacts there should be a third alternative on finding the
existing entry that says "do you want to overwrite the existing entry"...
 
The AutoComplete cache doesn't work against your Contacts folder at all...it
only works against addresses you've previously typed in. So adding a new
address to a contact has no effect against AutoComplete. If you're worried
about forgetting, delete the bad address from AutoComplete as soon as you've
added the new address to the contact.

Here's my normal procedure - can you make it any easier?:-
1. New mail received stating coming from new address or guessed so!
2. Right click address in reading pane, click "look up contact"
3. Often says isn't present but I know it is!
4. Right click again and click "add to outlook contacts"
5. Click save and close whereupon-
6. "Duplicate contact detected" appears saying would you like to:
......a. add this as a new contact anyway
......b. update new information from this contact to the existing one
7. If I add as new I'll have 2 contacts - probably Doe, John and John Doe
and requires considerable effort to delete the right one
8. If I update existing I get rid of Doe, John to the deleted items, but get
2 e-mails for John Doe - it's then an even bigger pain to delete e-mail 1
and transfer e-mail 2 to e-mail 1.
9. I'm then so exhausted I leave all the old change of addresses for months
until I get no such address reply!

Don't do add to contacts at all, then. Just copy the new e-mail address,
open the existing record for your contact, and paste it into the E-mail box
on the contact form. Save the item and close. My suggestion about
AutoComplete should still apply -- just remove the bad address from the AC
cache as soon as you've changed the e-mail address in the contact form.
