How to change default settings

I have an Epson LX300+ printer shared form a windows2000 server.
A 12 inch fanfold label paper is always mounted, and the driver is set this
way on sever.
A windows 2000 client captures the printer, and if I look on driver
proprieties on PC spooler, I can see 12 inch fanfold label paper configured;
but if I try to use the printer from a program, and I select advanced
proprieties, I find A4 as paper installed. So, in order to print correctly,
every time I have to set it to 12 inch fanfold label paper.
There is any way to change the client default advanced setting ?

Thank you for the help, but the problem is it doesn't keep what I selectas a
default.
