How to apply Find and Restrict methods on a user-defined field?

Same as on any other field. Just make sure it's defined in the folder, not
just in individual items.

Could you please tell me how to define them in the
folder? Since the custom form itself is published to the
Organizational Forms Library, which folder do I need to
use here? Thanks.
 
The field must be defined in whatever folder's Items collection you want to
Find or Restrict. You can use the New button on the folder's Field Chooser.
