I often get an email that needs a responce other than by email. It can be a
response by letter, phone, a package or other things. It would be fantastic
to be able to add a note to an incoming email. Important things to remember.
(When I called back, what we agreed on, what to do next.....)

What stops you? You don't state your Outlook version. For Outlook 2002/2003,
open the message, click Edit>Edit Message and add whatever you want. You can
do that in Outlook 2007 as well, but the Edit Message button is in the ribbon
and I don't remember where at the moment.

Maybe journaling is what you want. Enable journaling on e-mails. Then you
can review and edit the journal entries for them.
