how to accept a meeting invitation originally declined

I originally declined a meeting invitation, now I want to accept it. The
only copy I have is in my sent folder of the decline. How do I get it back
on my calendar and respond with an acceptance?

Ask the sender to re-invite you?
 
and if this is likely to happen often, change the setting.

Tools | Options | Email Options | Advanced ..

You can set it to not delete items from Inbox when responding. This means
that regardless of whether you accept or decline, it will stay in the Inbox.
