How many recipients can I use in one email?

I have Outlook 2003, how many email recipients can I use in one email.
Backend we use Exchange 2003.

I have a spreadsheet with about 1000's external recipients that need this
one off email.

The limit is set by your exchange administrator. You should instead send
individual emails to each recipient. Either look into mail merge, or if this
is something you plan on doing more often, please try our email scheduler
(http://www.lbetoolbox.com/scheduleemail.htm) which will allow you to send
multiple individual emails, html or plain text, with attachments, either as
a one-off or regularly at a specified time and interval
