How many Global Catalogues should there be?

Hi to the Gurus
I have 4 servers of varying specs but working okay. Number One is the web
server/proxy server that doesn't have AD. The other three all have AD,

Number two is a Print Server (Used to be the original DC)
Number three is the File Server (has everyone's work on it (800 users))
Number four has Exchange 2000. (new box)
Number three also has Exchange 2000 but I have moved all mail boxes to
number four and I want to get rid of Exchange off number three (how? best
practices please?).
Number three has the Global Catalogue.
Should I have the Global Catalogue only on the Exchange server (number four)
or on all the servers with AD?

There is another domain connected through a VLan with only one server
(admin) that also uses my Exchange server for its e-mail (two way trust
between domains) it also has a global catalogue, I guess just for its
domain.

Is there a best practices for Global Catalogue or a white paper I can read
about it?
I have searched TechNet and Google on Global Catalogue without much joy.

Any help much appreciated.

Your Google searches are probably failing because you need to use the
amusing American spelling of 'catalog'

For only 3 servers in a multi domain environment I would make all 3 servers
a global catalogue.

You should use at least two for redundancy and remember that the
Infrastructure Master FSMO role should not be placed on a GC so if you only
had two GC's then the non-GC machine would have to hold this FSMO role,
which may not be desirable. All problems and conflicts are neatly solved by
making all 3 DC's a GC.
