How is a anti-virus software really working?

I've been thinking a bit on how anti-virus software (such as Normann and
McAffee) really works? Does anybody know this?

Norton Antivirus, does it scan every file you open? Questions as that...

Does anybody *really* know?

The authors, really know, I would hope. Several Anti-virus vendors have
published documents (on their web-sites) on that very topic. There are
patents filed internationally for some of the technology. (see patent.gov.uk
"Symantec" for example)

Perhaps he may mean how do anti-virus programs work so fast? They only seem
to take a moment on each fine they scan. What do they look for? How do
they operate.
