How Do You Change the Font of a Caption Word 2007

Modify the Caption style. Here's one method: In the Styles pane
(Ctrl+Alt+Shift+S), click the Manage Styles button. On the Edit tab, locate
Caption and click Modify. In the Modify Style dialog box, make the desired
changes. Click OK. If you want to transfer the modified style to the
attached template, be sure to select "New documents based on this template"
before clicking OK in the Manage Styles dialog. If/when you are prompted to
save the template, choose to do so.
 
I have an issue where I change the Caption style as described here, but the change does not update the captions.

In the Manage Styles window, Caption is greyed out and has the statement: 'AutoUpdate, Hide Until Used' which implies that Word thinks I haven't used captions yet. Of course, I have been using captions and can reference them without issue. Also, if I edit the font or whatever for the Caption style, the captions in the document follow only some of the changes. Additionally, they only follow the change for as long as the Manage Styles window is still open. When I select OK and the window closes, all of the captions go back to how they were. Is this a bug?
