in earlier versions of Word, different reviewers would have different colours
applied to their tracked changes. Now, if I go in to change the colour of my
tracked changes, it changes the colour of all in the document.

Is there a way to set it so that each user has a different colour applied to
their tracked changes?

Presumably you're now using Word2007?

Review tab > Track Changes > Change Tracking Options, set the first
two dropdowns in the right-hand column (Insertions and Deletions) to
"By Author" (the first item in the list).

However, if at some point you used a security option to remove the
information about the identity of each author, that information is
gone for good.

Set the color dropdowns (separately for insertions and deletions) to
"By Author".

However, there is no way to choose which color is assigned to which
author, nor is there any way to be sure that the same assignments will
be made when the document is opened on different computers.
