How do you calculate elapsed clock time?

I created a spreadsheet needing to compute elapsed (clock) time between two columns (=I8-H8). I need the total minutes to not go over 60, but to record as an extra hour. Different formatting choices do not seem to work and compute results I am looking for.
 
Format as [h]:mm or [h]:mm:ss.
