I converted my email from Yahoo to Outlook 2007 trial, and now can't send or
reply to email, and my Yahoo! email is empty. how do I undo this, and get my
mail back to Yahoo?

What happens when you try?

You can't, except by forwarding all your email to yourself....

What was the process you used to "convert"?

To 'convert' I simply gave outlook my Yahoo address and I thought I told
Outlook to copy mail from Yahoo to Outlook. However, I can now send email
through Outlook. But is there anyway to get the email back to yahoo?

The send function is now working. It had been greyed out earlier.
So there is no way to download a data file that another mail program can
pick up?

Nope. You should have configured your account to leave copies of the
messages on the server. Since you didn't, they've been removed and, except
for forwarding them back to yourself (which will change the sender
information and time stamps), there's no way to put them back on the server,
as Gordon said.
