how do I specify the gender of someone in outlook contacts?

I was exporting my contact list and saw that gender was an option once
exported to XL. I've looked and don't see anything about how to specify it
while actually in Outlook. Could someone help? I deal with many foreign
names and knowing ahead of time if I should ask for Mr. or Ms. ??? would save
much groveling!
 
Add Mr. or Mrs. in front of the name. Or click the "Full Name" button and
type it into the appropriate field.

In addition to Ben's common sense suggestion, you could add the Gender field
to one of Outlook's view like the Phone List view. Right click on the field
name header of that view, choose "Field Chooser", use the Personal fields
category and drag Gender to the header line. The Gender field has three
states: Unspecified, Male or Female
