There does seem to be some limits on being able add/view the Organizer -
From field on the Day/Week View. However you can create another view or
add the field FROM to the view. I did this on the view for active
appointments and can now see the meeting Organizer. Though this does not
save you any steps. The other option I see is to actually customize
Day/Week view form.
