how do I set the FROM email address in outlook

I have two email address.
I want to receive from both but send from only one.
How do I set this up?

Define 2 e-mail accounts in Outlook. Specify whatever you want for either
of them, including the SMTP mail host. There is nothing that prevents you
from specifying servers from different e-mail providers within the same
e-mail account in Outlook.

Then set the one you want to send FROM as default.
However - Outlook will REPLY using the email address that the mail was sent
to, by default therefore if you NEVER want to send from one mail address you
have two options. Either set up forwarding on your mail provider's webmail
facility, or set the email account not to send in Outlook by going to
Tools-Send/Receive-Send/Receive Settings-Define Send/Receive Groups
 
As Gordon wrote, Outlook sends replies and forwards with the account the
email was received with.

There's a new Add-in that allows to set the sending account by folder, email
address or category. Please see the link in my signature for details.
