How do I recover cancelled meetings

I just discovered that when I cancel a meeting as the organizer, it deletes
the meeting from the calendar - period. So I can't track which ones were
held and which ones were cancelled. How do I stop that from happening and
how do I get them back now?

Don't cancel them. Instead, add a note to the occurrence that says it was
cancelled.
and how do I get them back now?

If they're not in your Deleted Items folder, you may have to restore them
from the Exchange backup.
