how do i password protect an individual email or folder?

i see i can passwoird Outlook as a whole but surely i can lock an email or
folder.....can't i???

No. Surely if you don't want people to access your email, then you don't
want people to access your email. What's the point in locking just one
email or a folder? And BTW, you may password your pst file, but once
Outlook is open then anyone can still see your email.
Set up a strong password protected Windows log-in and lock the screen
when you leave your machine.
