How do I .... in Avast?

Is it possible, and if so how, to let Avast deal with virii during a scan on
its own, rather than stop all activity until I have decided how to proceed
after each discovery?

dangerous, dangerous, dangerous... have you never heard of a false
alarm? imagine what would happen if avast happened to false alarm on a
critical file and you set it up to *automagically* deal with the
situation...

you seem to want an 'install and forget' solution - there ain't no such
thing...

The luxury of insouciance never comes cheaply.
If some happyclicker wants to dismiss any concern for the security of
their data and continued performance of their machine, they could hire
someone with a brilliant mind and the dedication to use its capabilities
to accomplish this task,

just make sure that you've hired the right person. ;-)
