How do I highlight text on Outlook 2007?

I am unable to find out how I can highlight text with Microsoft Outlook 2007.
I had Outlook 2003 and it had highlighters of various colors available. I
am unable to locate any highlighters with 2007. In fact, 2007 is not near
the software as was 2003. Quite a disappointment!
