How do I group emails in the same pane on the task bar?

Whenever I create a new email or open an email it opens another pane on the
task bar. I used to be able to avoid this by grouping them in the options
menu in outlook but i cannot figure out how to do this in 2007.
 
That is a Windows option and not an Outlook option.
Right click on an empty space in the Taskbar and choose Properties. Here
select "Group similar taskbar buttons". Now, when space runs out on the
Taskbar, the buttons will group.
