how do I filter for tasks due on a selected date?

I need to plan tasks which must be done on given days. One way to do this is
to set an all day appointment. It would be more convenient to be able to do
this in the task manager. Is there a filter I can use in the taskpad which
shows only the tasks due on the selected day?

Filtering for

due date = today

only gives the items due on the day I am doing the search, which doesn't
help much.

Also, filtering for "active" tasks returns many tasks that I don't want in
the calendar view: I just want the tasks which MUST be done that day or not
at all.

unless you assign a due date to all tasks, no, not on selection of a date -
you can create a custom task view that shows only those due today.

Suppose I do assign a due date to every task: is there any way for the
TaskPad view to compare this date to the date selected in the calendar view?

So, for instance, if I know someone will only be available on a certain
day, I can set a task to show on that day's calendar only. (Whenever I look
at it).

in the taskpad, yes (you also need the monthly calendar view). there is a
view for 'show tasks due on selected day' - click on the field names above
the taskpad to change the view.
