How do I exclude the email address from the display name?

Is there a way I can set up my address book so the "Display Name" doesn't
include the email address?

Yes edit the contact "Display as" entry

Version of Outlook? You can change the display name in the contact, but if
you select the address from the nickname cache, the address is likely to be
included.
