How do I easily add an incoming email address to my address book?

Is there a way to automatically add email addresses when I receive them? Or
add them automatically if I choose for them to be added? Thanks.

No one would ever want to add the email addresses of all senders
automatically.
You can easily R click any address you want to add and use the "Add to
Contacts..." action in that menu.

Let's take it up a notch - is there a way to set Outlook to automatically add
all email addresses to a contact list, or to otherwise remmeber them, when an
email is sent out (usually a reply)?

Not natively.
To automatically add the email address of people
you respond to to your Contacts Folder requires code:

http://www.outlookcode.com/d/code/autoaddrecip.htm
http://www.slipstick.com/contacts/addauto.htm
