How do I customize my calendar to show night work?

My day runs from 2 PM to 7 AM, and I can't access my most important times of
day--primarily 1 AM - 6 AM. However, I'd like to have the whole day (2 PM -
7 AM) displayed, preferably in military time.

But anyway, to do it:

Tools
Options
Calendar options in Preferences tab
Change start time to 2pm (or whatever time you'd prefer)
Ok.

When you go back into your calendar it should display the
start and finish times selected.

No, it won't. Outlook assumes a work day is entirely contained within one
calendar day. You can't specify a start time of 2:00 PM on one day and an
end time of 7:00 AM the next day. Work days cannot cross the midnight
boundary.
