How do I convert :) to a smiley in my e-mails?

Not possible with Outlook 97-2003. Outlook 2007 supports this feature.
 
Unless your mailer will do it on its own, you don't. I guess, if you
wanted to, and you're using HTML email, you could drop a smiley image in
there...

Sure it is, at least in OL 2003. AutoCorrect, either in the Outlook
built-in editor or in Word, can to it.

Ok, in works in OL 2003 with Word as email editor ¡X sorry OP! But not
with the Outlook built-in editor, at least not on my computer. When I
compose an (html-)email with Outlook's editor the ":-)" doesn't switch
to a smiley, whereas it works when I use Word as editor.

I don't use HTML, but it sure works for Plain Text and Rich Text when using
the built-in editor.

It doesn't work neither with HTML, nor with Plain- and Rich-Text! It
also doesn't work with word when using Plain- or Rich-Text. I don't know
the reason why it works on your computer but not on my (Outlook 2003
up-to-date). Might it be that is be related to the different language
versions of our Outlook's?

In Word's options I see the smileys, but not in Outlook.

By the way, when I use Outlook's editor, the AutoCorrect doesn't work,
whether I use as format HTML, Plain- or Rich-Text.

Beats me. I use English Outlook and when I click
Tools>Options>Spelling>AutoCorrect and check "Replace text as you type", I
can put :-) in the left hand "Replace" field and ☺ in the right-hand "With"
field and Outlook's editor does the replacement in both Plain Text and Rich
Text. Perhaps you didn't scroll down far enough or perhaps I added the
replacement myself.

I have put now the :-) in the left field, and your smiley (I have copied
it out of your posting) in the right field. And it works! If I get it
right I have to copy the smileys from Word, create a new AutoCorrect
"rule" in Outlook and put the smiley in.

Yes, I did! In my Outlook there is no standard replacement :-) -> ☺
or perhaps I added the replacement myself

Maybe ;-)
