how do i change my reply header information?

I'm looking for a way to change the way my reply header information appears.
For example, I've seen some people just show: Karen wrote on .......
while mine always has from:.....to.....date......and subject line....
Please advise whatever help you can, i've looked everywhere i can think of.
 
outlook does not support custom headers

thank you. do you by chance know of any other email system that would allow
me to change my header informaton? (ie, outlook express, or whichever system
other people are using that allows them to)

I think most non-ms email programs allow it.
