How do I change how the drop down contact list looks?

How do I modify the list of names in the drop down list so that the names are
listed alphabetically by last name rather than by first name as they are now?
How do I remove one of the columns from the contact list (Display Name)
leaving just the name and e-mail address?

If you're using 2003, go to:

1) Tools>Email Accounts>View or Change existing Directories....
2) Click Next
3) Select the Address book, click Change
4) Make selection under 'Show Names by'

I'm not sure in 2007, I think it may make more sense than 2003
