How do I change "e-mail (name) display" name?

For any one outgoing e-mail message I can change the displayed contact name
any way I choose - e.g. first name, nickname, etc. But it won't "stay" that
way in the displayed name column - the next time I send to that person I have
to repeat the "shortening" process. Is there a way I can make the change to
"stay" that way?

Outlook verson?
 
Brian - - that's the whole problem. I can make the "display as" change for
any particular contact if I am mailing to that person- I just delete last
name and e-mail address from "display as" line - but as soon as I leave the
contact list, e.g. to look at calendar, it reverts back to the "long" form as
if I had done nothing. Maybe I just have to do it each time I'm mailing
someone? Or maybe I have a defective version of the MSN software? It just
won't "save" the way I set it.

I don't have any personal experience with Outlook Live. What about logging
into MSN via the web interface and manipulating the address there?
