In a Word document (Office Professional 2007) I would like to have a default
of 2 spaces after every fullstop. Can I set this to happen automatically?

No. You need to press the spacebar twice. (When you're using proportional fonts,
two spaces shouldn't be necessary anyway.)

What you can do is set the grammar checker to notify you with a green wavy
underline where there is only one space. Go to Office button > Word Options >
Proofing, click the Settings button in the third section, and set the "Spaces
required between sentences" option to 2.

Go to Office Button - Word Options - Proofing - AutoCorrect options and
replace a single full stop with one plus following two spaces. Works every
time.

Even where you don't want it, such as within a price.

Better to make the AutoCorrect "full-stop-space" change to "full-stop-
space-space".
