How do I alphabetize contacts within the categories?

I can sort the contacts by name, or by category, but don't know how to sort
them further within the category. Can that be done?

To what view are you referring?
What Outlook version?

Apply the By category view then click the full name field to sort by full
name within each category.

You certainly cannot sort by Category. You can group by Category, but not
sort. Sort bt the field you want, then group by the category or group by
the category and then group by the other field.
