How do i add items to the quick start menu?

ALso how to i add things to the desktop without them changing to shortcuts?

What do you mean "the quick start menu"? Do you mean the Quick Launch
toolbar or the recently used programs on the Start Menu left side (if
not using Classic theme)?

1. For Quick Launch bar - Right-click the Taskbar and Unlock. Then
right-click and drag an icon for the desired item to the Quick Launch
toolbar. Release the mouse button and you will get a context menu.
Left-click on "Copy".

2. For the Start Menu, you can right-click the item and choose "Pin to
Start Menu".

3. For the Desktop, right-click the desired item and choose "Move".
Obviously you would only want to do this with data items such as
documents or pictures and not a program! However, keeping items on the
Desktop is not a great idea. Things can get easily deleted by accident
and omitted from backups. A better idea is to right-click/drag/Create
Shortcut. You can right-click/Rename to change the name from "Shortcut
To..". You can also remove the shortcut arrow with the TweakUI Power
Toy (free from Microsoft):

By quick start, i meant the xmall icons next to start menue
