How change only the last entry of a recurring task and not prior o

If I create a recurring task like a monthly car pmt for 3 yrs and I edit the
last pmt (task) to just say "Paid in Full" - it changes all the other prior
entries and I lose all the data I entered re date paid, etc. How can I edit
just the last entry and not modify the others?
 
I'd try using a calendar item instead since you have more control over the
individual items. When you open the entry it Outlook should ask if you want
to open the series or just this occurence. Open the single occurence, edit
and save it.
 
I understand the effect of opening a single vs series of items. Here is the
problem: Lte's say you have 12 month of car pmt of $100/mo so you enter as a
series of 12 pmts. Each month you enter a note (in the single month
occurrence) re Date Paid, check number, etc. Then you get a letter that in
month 7-12 you have to pay $110/month. If you open the series to change
months 7-12 to remind you to pay $110, it wipes out all your month 1-6 data
re pmts made (date, ck n o., etc.). This seems like a real drawback and I
can't get a good answer/solution anywhere.

Are you aware that a recurring item is only one item, no matter how many
times it appears in your calendar? I suspect that's why you're seeing what
you do. If I were in your shoes, I'd make 12 nonrecurring events by
creating the first, then copying it to the remaining months.
