How can I track all Outlook activity?

Does Outlook 2003 create a log of activitie including sent, received, and
printed emails? Someone recently illegally accessed my work email and
printed out some of my confidential emails. If they forwarded the emails to
themselves, they erased them from the Sent folder. Does Outlook keep a print
log or a backup Sent folder?

In advanced options you can turn on logging to track things, by default it is
off. You can also do this at the server level in Exchange, but again, it is
off by default.
 
If you connect to an Exchange server and the Exchange Admin has Deleted Item
Retention turned on, if the user who accessed your email didn't hard delete
the emails they forwarded, it may be possible to recover them.

In your Deleted Items folder, click on Tools and scroll to Recover Deleted
Items. Depending on how long Deleted Item Retention is set for, the emails
may be there.
If they were hard-deleted they won't be.

Also, I think Outlook 2003 has journalling but it only works if it's turned
on.

Hello, we currently have outlook calendar, and all employees have access to add stuff to the calendar. is there a way I can see an activity log of who added or deleted events?
