My calendar in Outlook 2003 starts at midnight, and there's a lot of wasted
space when (I hope) I am sleeping. How can I set the calendar start time to
7:00am, so that the afternoon and evening hours are the ones that show up?

If you go to Tools, Options, Calendar Options you will see that you can
choose the start time ect

Do this:
1) Click on "Tools|Options"
2) Click on the "Preferences" tab
3) Click on the "Calendar options..." button
4) Under "Calendar Work Week", select your "Start time" and "End
Time" from the drop-down boxes next to "Start time..." and "End
time..."
5) Click on "Ok" twice

I also advise that you do this:

While in the "Calendar" view,
1) Click on "View" in Menu
2) Click on "Arrange by..."
3) Hover over "Current View" with mouse pointer
4) A sub menu will open: Click on "Customize Current View"
5) When settings page opens, click on "Other Settings..." button
6) Under ""Week" section, uncheck "Compress Weekend Days"
7) Click on "Ok" twice
