How can I save emails I send to contacts in activities of Outlook?

Whenever I send emails in Outlook the automatically show up in the
"activities" section of Outlook under the specific contact. This is excellent
because if I ever have to go back to see what communications I have had with
a specific contact it is easily accessible. This could come in handy if a
client says "You never sent that" or "you never told me that". Initially the
message is saved but it disappears after a certain amount of time. I want to
know how I can PERMANENTLY save every email I send to a specific contact in
an easy to retrieve and organized manner?
 
Remove the option to archive the Journal.

the (insert latest virus name here) virus, all mail sent to my personal
account will be deleted without reading.
