When I try to save a large emailed Word file, I must retype the file name
since Word is automatically truncating the file name (using a tilda and
numbers). Can this feature be changed?

Are you opening the file directly from the e-mail message attachment, before
trying to save it, or are you saving the document from the attachment before
opening it? If the former then Word opens a temporary file and it is this
that you are obliged to rename. There is nothing you can do about this,
except use the second preferred method. Recent security measures, when you
get round to applying them, will make it difficult to open potentially
dangerous attachments, like Word documents, directly from e-mail messages.
