How can I retreive archived items?

I use Office 2003 and would like to archive my Inbox and Sent box and am
frequently asked to do so by Outlook. However, I cannot find any info on how
I can search for and retrieve archived items.

I am afraid that if I archive them they will be lost forever.

How can I retrieve archived items?

You'd open the archive PST file you specified (file | open | Outlook Data
File) and access the items that way.
 
Search for Archive.pst or check Archive properties for location.
In OL File/Open/Data File and browse to location of archive.pst
You can then browse the archive just like your std Personal Folders
