How can I record mp3 ?

I want to record some notes using my microphone and then burn them to
CDS to use with my cd player (MP3 files)

Sound recorder will only record wav file about 3 minutes long.

Is there any free ware to help do this? I have itunes but didn't see
anyway to record files.
