How can I customize the address book like with details templatesplease?

Hello,

I know that you can modify the details templates for users, i.e., the
form displayed when you select the Properties of a recipient, but how
can I changes the fields displayed when a user opens the address book
by clicking on Tools - Address Book in Outlook?

I need to change the field displayed for the office address to use an
extensionAttribute.

No one uses the Address Book view for anything, nor should they. It is not
an interface intended for any data entry or modification, and if you use it
that why, you'll regret it. --

My customer reckons that some of the info displayed in the address
book is sensitive, e.g., office addresses, so I want to take the
office address from one of the extensionAttributes instead of the
default attribute.

I can easily do that for the Properties view by modifying the details
templates. That has no effect on the address book view however. How
can I change the info which is displayed there please?

Outlook does not display any addresses other than electronic addresses in
the address book view.
If you are opening the Contact Record from there, you are not talking about
the address book view.

Open Outlook and click on Tools - Address Book or Ctrl+Shift+B and
make sure Global Address List is chosen. That displays the "Address
Book" with Name, Business Phone, Office, Title, Company, etc. I need
to change the attribute it uses here for "Office", just like I did
using details templates.
 
If you use Outlook 2007, you can make some changes to the view - see
http://support.microsoft.com/default.aspx?scid=kb;en-us;970144. If this
doesn't allow the changes you need, its not possible.

No, AFAIK, you can't edit it in older versions.

(This is why its best to include the outlook version when asking a
question.)
