How Can I Create a "My Documents" Style Folder that Redirects, on my Desktop?

I have this bad habbit of storing crap I download and files I am
editing, directly on my desktop. The problem is, it makes my profile
too large and as you know, a large profile slows your logon/logoff.

I had this great idea, I would just create a folder on in my home
directory lan share and make a shortcut to it and then I can easily
store all this junk there - easy to get to, but the only thing on my
desktop that goes in my profile is the shortcut. The problem is that
when I download and I want to save or when I'm in an application like
Word or Excel and I want to save, I can't open the shortcut and save to
the folder I created on my lan share.

Okay, so I thought, why not create a "My Documents" type folder that
can be redirected to my lan share - only I don't want to use "My
Documents". In fact I don't want just one, I want two - let's just
call them "My Crap" and "My Current Work". Now the problem -- how to
do it. Any suggestions?

Remember, I want to be able to drag-and-drop a file on this icon that
resides on my desktop and have the file be stored in the redirected
folder. Also, I want to save to it while in an application like Word
or Excel.

Create a special "Folder Shortcut" by opening the start menu folder (right-click Start button -> Open), along with the folder containing the folder you want a shortcut to. Right-click & drag the folder to the start menu folder, & when you release the button, choose "create shortcut here."

If you view the properties for this shortcut, you will see it only has one tab & describes itself as "Folder." You can then cut & move this shortcut to wherever you like and it will behave like a "real" folder in Open/Save dialogs.
