When someone sends me email,
I would like to have his/her address
automatically added to my address book

How could I do that ?

How can I add the email WITHOUT doing it manually ?
i.e. when someone sends me an email,
he is automatically added to my address book
(without right clicking and adding)

Outlook does permit that because it is such a bad idea. You want to retain
more control over what and who gets added to your Contacts.

You can do it with add Contacts plug-in. It automatically adds e-mail
addresses to the contact folder when you reply to a message and/or send a new
message.

Add Contacts also works with incoming messages as you need.

That would be foolish. All the SPAMmer addresses from which you receive mail
would then also be added to your Contacts. Do you really want that? You'd be
better off aving people to whom you reply added automatically, not everyone
who sends you a message.
