I want to hide the country/region field when I use the Outlook Adress Book to
enter a contact into Word 2007. Is there a way of changing the built in
macro? If I have to put United States of America there I may as well add
Planet Earth.

I have office 2007. and I did look at http://www.gmayor.com/Macrobutton.htm,
but unfortunately I didn't understand it.

To learn about ways to control how an Address is inserted into Word from
Outlook, take a look here:
Word 2000/2002:
